Rosemary & Sea salt Spent Grain Crackers


Seeded spent grain crackers flavoured with Rosemary & Sea salt

Working with local brewer Windswept, we have developed these recipes to utilise the cooked grains from the brewing process (hence the name spent grain!).  Still packed full of protein and fibre, the grains get a second chance and are flavoured, then baked, to create a crisp textured wholemeal cracker.

Wholemeal Flour[Wheat Flour, Wheat Gluten], Water, Vegetable Shortening [Rapeseed Oil, Emulsifier: Mono-and diglycerides of Fatty Acids], Spent Grains 9% [Malted Barley, Water], Golden Syrup,

Sea Salt 1.9%, Dried Rosemary 1.2%.

Zero Waste Scotland
Maclean’s Highland Bakery and Windswept Brewing Co worked collaboratively to reduce waste from the brewery by using the by-product to develop a new cracker. Zero Waste Scotland provided support to model practical and commercial elements, helping to develop the new crackers from spent grain from the brewery.
